Our Story

When Mark & Kim Cooper were attending Angelo State University in the mid-80s, they had no idea fate would bring them back to the Concho Valley, but that is precisely what transpired in 2016.

Growing up in Mason, TX in the early 70s, Mark had the opportunity to be raised in a family of pitmasters, nurturing an intuition for true Texas BBQ from his grandfather, George Cooper, and his uncle, Tommy Cooper. These two pit pioneers taught Mark everything he knows, and he became enamored with it, so he vowed there would be a day when he would open up his own place, and continue the tradition of his grandfather.

In 1999, such an opportunity arose in Junction, TX with his father and mother, Roy and Sheila Cooper, along the bustling junction of Highway 183 & I-10. For almost 17 years, Mark & Kim managed daily operations and maintained partial ownership, until a family friend provided an opportunity to establish a new chapter in the legacy of George Cooper. Mark & Kim envisioned an inclusive, family-friendly atmosphere, showcasing local talent as well as world-renowned musicians; this is our philosophy, our mission statement, and our motto.

We sincerely hope you enjoy Cooper’s Bar-B-Q of Christoval, Texas as much as we enjoyed building it for you, and we appreciate y’all for making this establishment such a special and unique artifact of West Texas. We could not have done it without you, so whoever you are, thank you.
